The slaughtering in fact, includes the pre and post-felling that are among the most delicate phases of the supply chain, as they can affect both the positive and the negative quality of the final product depending on how they are managed.

The Chiari brothers were the first in Italy and among the first in Europe to adopt important innovations in the slaughter phase. Everything has been studied to avoid unnecessary suffering to the animal before his death and after it, in order to guarantee the quality of the meat. In addition, slaughterhouses are characterized by a vertical structure with the aim of increasing their efficiency and limiting energy and water waste. After the slaughter, the veterinarian carries out a final post-mortem inspection, followed by the labeling phase for which the company organization has created a particular software.

Then there is the phase of abatement of the half-carcasses that, checked, approved and labeled, enter the abatement chamber where they are subjected to a strong current of cold and very dry air, which causes a sudden cooling with the aim of suspending the activity bacterial. Afterwards they are transferred to the storage cells: the refrigeration phase is fundamental because it guarantees the preservation in optimal conditions of the meat and allows its maturation.

Next the half-carcases are sold in bone or processed, boned and vacuum-packed in the cutting laboratory and always packed inside the company.

Finally, the company itself is responsible for the distribution of products through integrated logistics and its own means of transport.
